Cauliflower Fried Rice

If you’ve been following us, you know that we love easy meals that pack in as many nutrients  as possible.  Hence making fried rice out of cauliflower!  If you’ve never tried “ricing” cauliflower, it’s worth giving it a go.  The taste and texture are comparable to rice while adding way more nutrients and limiting the potential insulin spike that a comparable serving of rice could have on your blood sugar.  Enjoy!!

Cauliflower Fried Rice

Serves 6


1 Head Cauliflower (preferable organic)

4-6 Thinly Sliced Carrots

1 Onion

2-3 Garlic Cloves

1 Bell Pepper

1 Pound Ground (or canned) Salmon**

6 Tbsp Gluten Free Tamari Sauce or Coconut Aminos

1 Tbsp Coconut Oil


  1. Chop carrots, onion, garlic, and pepper.
  2. Cook veggies in coconut oil in large cast iron or stainless steel pan until they begin to soften.
  3. While veggies are cooking, wash cauliflower and roughly chop into florets.
  4. Shred cauliflower using shredder attachment on food processor.
  5. Veggies should be thoroughly cooked by now, add salmon and cook 1-2 minutes until pink.
  6. Add Cauli-rice and Tamari sauce/coconut aminos and cook for a few more minutes until everything is thoroughly incorporated.

**This recipe is super versatile – substitute whatever veggie/protein options you want (a few scrambled eggs would be delicious)!
